Delicious and Healthy Red Lentil Soup


Ingredients


- 1 cup red lentils

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 2 carrots, peeled and diced

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon paprika

- 1/2 teaspoon dried thyme

- 4 cups vegetable or chicken broth

- 2 tablespoons tomato paste

- Juice of 1 lemon

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)

- Lemon wedges (for serving)


Directions


1. Rinse the red lentils under cold water until the water runs clear. Set aside.

2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and diced carrots. Sauté for about 5 minutes until the vegetables begin to soften.

3. Add the ground cumin, paprika, and dried thyme to the pot. Stir well to coat the vegetables with the spices.

4. Add the red lentils to the pot and pour in the vegetable or chicken broth. Stir in the tomato paste.

5. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes until the lentils are tender and cooked through.

6. Using an immersion blender or regular blender, carefully puree the soup until smooth and creamy. If using a regular blender, blend the soup in batches, being cautious with the hot liquid.

7. Return the soup to the pot and reheat over low heat. Stir in the lemon juice and season with salt and pepper to taste.

8. Serve the Turkish Red Lentil Soup hot, garnished with fresh parsley. Squeeze a lemon wedge over each bowl before enjoying for an extra burst of flavor.
